Rating: ⭐⭐⭐⭐ Heat:🔥🔥🔥🔥 Welcome to 1 of 10 posts in collaboration with @hot_sauce_society, London's FIRST hot sauce festival! Coming this April 13th a host of hot sauce producers (including myself) will be gathering in Copeland Park, Peckham for a day celebrating the iconic condiment. I'm going to be reviewing 10 of them, 1 per day, ahead of it and what better place to start than @peckhamsauceco and their 'Batch One' sauce.
_ 👁 I love that I'm starting with this little sauce. The bottle is unconventional and showcases the beautiful deep colour of the chilli, whilst the label contrasts brilliantly. It's all lines and very modern in stark contrast to the vibrant barrage of colour that hot sauces usually adorn themselves with. It's sleek and I'm in. _ 👃 On smelling you get that crisp, strong front that's typical of fermented hot sauce. There's vinegar and a decent tingle from the heat but it leaves the rest to the imagination. _ 👅 Now I've tasted this kicks. It's a very classic straight up hot sauce but done with love. The flavour from the chillies themselves is good which suggests some intelligent 'saucing' of ingredients. My only criticism would be that it feels like they've gone a little hard on the salt, which is easy to do with fermented sauces as you often do them in brine. _ 👭 I'd pair this with something fresh. It's definitely well suited to vegan food and anyone that wants to eat clean. Maybe try with some roasted broccoli and falafel. I love roasted broccoli with plenty of olive oil... mate.
